The
entry to our cellar is well protected by the distinguished
figures of our ancestors !
They stay a maximum of two years in cask before being bottled
During this period, they are regulary examined, drawn off
once by racking (separation of the lees and clear wine)
; finally they are fined « collés » which
consists of clarifying the wine.
The bottling of the « grands vins » is carried
out by hand in Gevrey-Chambertin.
The casks are rolled in order to mix the lees and
the wine , allowing the fermentation to happen ,conserving
the lively colour and freshness of the wine.
The bottling takes place after 14 to 16 months without
fining ; it is carried out after a light filtering
to avoid any cloudiness in the wine.
Before bottling, samples of both red and white
wine are each poured into a ballon glass to be observed
in front of a candle light to ensure perfect clarity.
Bottles are stocked without labels and capsules in our
different cellars while waiting patiently to be shipped
to our customers.
From each year’s vintage, a certain quantity is
conserved in order to offer wines as old as thirty years.
